Overnight Oats Recipe

Okay so I may be new to this concoction called overnight oatmeal. Why have I not ever tried this before a few days ago!? It is heaven in my mouth delicious! I have decided to share with you all my couple of recipes I have been trying out and they are mighty tasty.

Simply Pure & Beautiful Overnight Oats


Ingredients:
1/4 cup of rolled oats
1 cup of greek yogurt
1/4 cup of chia seeds
ANY FRUIT YOU WANT
***I used blueberries, strawberries, blackberries, and a banana***

Directions:
 Mix your oats, yogurt, and chia seeds together and let sit overnight in refrigerator. In the morning combine your oats and your fruit together and enjoy! You can eat them cold or hot whatever you prefer. They taste great cold in my opinion. 

Hope you enjoy this delicious treat! It makes quite a bit. I could only eat half of what I made, so if you need to reduce your measurements that may help save food from going to waste :)

Life Lately

I just want to send out a huge apology for the lack of postings lately. We just recently got Internet, so hopefully my blogging will start to be more consistent. Living out in the country makes it challenging to finding an affordable Internet provider, but we did it! After switching back and forth between providers we finally have WiFi no more dial-up for us country folks. 
With that being said I plan on making it my goal to write up at least 10 new blog postings a month and as I get ideas generated I will start blogging more. Brainstorming post will be my biggest challenge, because I feel there are many health and fitness blogs out there and Pinterest is an easy place to find what you are looking for. I hope to make my blog something bigger and it all will start with providing you all with beneficial information in my postings. I have came up with a few of my own recipes which I wrote down so I will not forget them. My plan is to start crafting up some healthy recipes and share them with you all on the blog. 
I need my followers to help get my blog out there! I want to help you all with whatever you are searching for from my blog and I hope I can assist you in what you are looking for. 
So with all of that being said...here has been my life lately.
I have continued with my AdvoCare journey and have consistently stuck to eating healthy.

Other than that I am in my Senior year of college taking 18 credit hours and working 30 hours a week.  Life has been moving way to fast and I wish things would just slow down a tad bit, so I can actually wrap my head around everything that is occurring.

Sushi Sunday


Snow, snow, blizzard, and more snow, that is all that has been happening around the Hoosier state since December. I am so ready for spring and warm weather to arrive and ditch these freezing temperatures. Since this cold weather has had us all locked up in our homes for a few months, my main squeeze decided to take me 
and my brother out for sushi. I definitely didn't want to turn down that offer. I could eat sushi everyday if my wallet would let me :) 


This photo doesn't even do justice for how much sushi we ordered. I think we could of fed an army with the amount we ordered. Ooopsy

And the one in the middle with the orange sauce was so delicious, but I can't remember the name of it. It was stuffed with cream cheese, crab, eel and a few other things. So so sooo yummy!! I told my brother that we were gonna have to start calling Sundays Sushi Sunday, since we have love it. 
The best part about this meal tonight was that I didn't feel guilty for eating it either. Score! Clean cheat in my books. 
Tomorrow I am starting a whole new week of workouts, so here's to a fresh start! Now go getcha some sushi!!

Results are IN!!

24 day challenge results are in! So something happened to my scale along the way of my challenge and I have no idea what happened to it but it's broke. Errrr I was so ticked when I went to weigh in one day and I got an EE on the screen. Guess I'll have to go buy a better scale next time and not a cheap one. 
But here it is! Day 1 vs Day 24 my body is feeling so much better after this challenge. I have more energy and I feel leaner. I am not to worried about the number of pounds I have lost because that doesn't mean anything to me anymore. The physcial transformations and the mental ones are the more important things I am taking away from this challenge.

Pre-workout Smoothie


Yesterday I was playing around with different ingredients for some smoothie recipes and I discovered this one! It was so delicious and I drank it 30 minutes before I hit up the gym yesterday!! For some proof that it got my ass in gear I wore my polar watch while I worked out and ended up burning 600 some odd calories!

Yummy Clean Meals with Recipes

Here are just a few of the meals I have whipped up during my 24 day challenge and they have been delicious and have kept me full! 

Breakfast: 5 egg whites 1 whole egg with some mustard. 1/8 piece of grapefruit. (I almost throw up when I eat grapefruit because of the taste, so I'm weening myself to like them) haha we will see how this works out for me.  


Lunch: sliced up some lettuce proabably about 2 cups here. Added some chicken and shredded cheese with a little ranch dressing. 


Dinner: whole wheat spaghetti with ground turkey and mushrooms. Sprinkled a little parm on top. Mmmmmm sooo goood! 


Lunch or dinner: can have it for either meal. Just a salad loaded with veggies and used baslamic vinagrette for my dressing. 


Snacks: I sliced up a whole cucumber and had for my 3 o'clock meal. These are a very filling snack since they have a lot of water in them. And they are declicious! 



Lunch or dinner: I ate this delicious meal for lunch one day when I got off work early. It took no time at all to make and was uh-mazing!! Baked tilapia with Mrs. Dash festa lime, quinoa, and asparagus baked with extra virgin olive oil and Mrs. Dash garlic and herb and onion and herb. 
Definitely a meal to try!

10 Day Cleanse Results!

Day 10 has come and passed! I know I haven't been posting daily anymore, but I do have great news!! I have lost 6 lbs in just 10 days! I am freaking rocking this 24 day challenge!
My diet plan has been 100% clean, lean, and green plus drinking a lot of water. These are what any nutritionist would tell you, you should be doing to lose weight. Just exercising won't get you there. Trust me from experience. I use to eat anything and everything I wanted would play volleyball for 3 hours and stay the same weight throughout the whole season. This was because I never changed my diet and I never ate anything that was remotely healthy. Now it is kicking me in the ass, because I continued to eat this way throughout my years of being in college, but the big difference now is that I am not working out on the volleyball court anymore for 3 hours. 
Okay ramble, ramble, ramble...time to get back on topic...
Here are a few smoothie recipes I have whipped up! 


Recipe:
I don't know the measurements for anything because I just threw some ingredients together so feel free to experiment. This made 2 servings 
Mango chunks 
Blackberries 
Blueberries 
Vanilla low fat Greek yogurt 
Whey Protein powder
Almond Milk
Ice

Days 4, 5 & 6!

Okay so I've been slacking with my daily posts on how my challenge is going and the foods I've been preparing. On days 4, 5 & 6 I didn't take to many pictures of what I ate but here are the ones I have for ya all. 
Breakfast: 
Blueberries! 
For lunch I had asparagus, orange roughy, and half of a sweet potato. It was definitively a filling meal! 

My dinner consisted of ground turkey, peppers, diced tomatoes and rice. This meal was delicious! Who says eating healthy can't taste good! 

Day 4 & 5 meals 
Breakfast I had mangos and blueberries 
My lunch was tuna stuffed hard boiled eggs and pretzels 
And then dinner was whole wheat spaghetti with peppers, ground turkey, and mushrooms plus some asparagus spears. 

I love asparagus but I hate how it makes my pee smell! TMI?! Nahhh 
Day 6 I ate some more mangos and blueberries for my breakfast...man I need to switch things up. 
My lunch was leftovers from last night 
And my dinner I didn't get a picture of but I had green beans, cottage cheese, sweet potato and tuna on whole wheat. Was a pretty good dinner you could say. Leave me some comments if ya have any good healthy recipe ideas. My brain has not been functioning this week since work and school are becoming a little overwhelming. I'd love to hear your ladies ideas!

Days 2 & 3 of AdvoCare 24DC

Welcome to Simply Pure & Beautiful! I am excited you are here and hope you will stop back on by. Today's post is reflecting my days on my AdvoCare 24 Day Challenge. I started this challenge on Monday, and I'm already feeling great and can tell my body is making changes. Yesterday I had to run my grandparents to the grocery store to get a few things before the big snow storm hit and of course I could not just not buy anything. I ended up getting more fruit, fish, and almond milk plus a few other items such as Mrs. Dash! 
BAMmmm!! 
I can't wait to cook with these seasonings and most importantly they are salt-free. I am trying to stay away from salt this time around on my challenge because it makes the body bloated and retain water. So good bye bloat, hello flat tummy (in time) haha. 

Well here I am today! Day 3 and feeling amazing. 
When I woke up this morning I felt so refreshed and lean. This made me super motivated to get my day started on the right foot. For breakfast I ate an omelet, sausage, and oatmeal. 
The omelet and sausage were good but the oatmeal on the other hand I had to pass on that. It was too mushy for my taste, and good thing because I was already full. About 2 1/2 hours later I ended up eating an apple for my snack and then another 3 hours later I ate lunch. I was on top of my meals today even though I was stuck in a hotel for the majority of the day. 
For dinner  I ate a salad and a piece of whole wheat bread. I was a little hungry still so when I got home I ate my egg stuffed tuna. 
Overall, these past three days have been easy. I will post day 4 tomorrow and show you my meal prep for the next few days to come!

Day 1!

Today I am feeling AMAZING! Woke up around 6 this morning and mixed together my fiber drink and spark. I had to chug that stuff down because it was nasty! Very pulpy and the texture was just sick, but definitely helps get your GI tract a moving. For breakfast I made oatmeal, but I put way to much almond milk in it and it was just too runny. My morning was not starting off on the right foot. So I grabbed an apple and headed on out for work. Once I got to work my day got a little bit better, because the day just moved right along. It seemed like I was only there for a couple of hours vs the 8 I actually was on the clock. While at work I had my meals 2-4 and here is what they consisted of...
Meal 2 was hard boiled egg with tuna in the middle. I made these like deviled eggs but removed the yolks. The tuna was just stuffed in the middle like you would a deviled egg. It gave me a boost of energy that is for sure!
Meal 3 was lunch! I had a spinach salad with snow peas and cucumbers mixed in. I forgot my dang dressing, so I had to use whatever was in the refrigerator which was fat-free ranch. I just had to settle with it. 
Meal 4 were cucumber slices (a whole cucumber people!) 
I ate all of these meals 2-3 hours apart throughout my day. This kept my energy levels high and metabolism burning as well. I also made sure I was drinking plenty of water today. I had over 10 glasses of water! HOLY CRAP! I was peeing all damn day. 
When I got home I waited until around 5:30 to fix my dinner, and I actually snapped a little picture of what I was making to share with you all.
 I fixed turkey burgers, asparagus, and a sweet potato. This meal was by far the best I have ate in a while. It was mighty tasty I may add as well. 

I made enough to split it up into two separate meals. Of course I ate one tonight and I am going to save the other half for tomorrows lunch. That way when I get home from school I won't have to cook anything. All I will have to do is pop it in the microwave and eat. YAY food!
This is just the beginning of my challenge, but so far so good. I am so ready for the rest of my challenge to run as smoothly as today did.
